Please check My Links page. I've added links for hmailserver (email server for Windows, and it's free!!!) and qmailrocks (step by step instructions to set up your own linux email server). I've used both software and they're quite amazing, being free and not resources hungry software.
hmail is recommended for newbie, qmail is for expert.
